The Handmade Soba Class is an experience-based program designed to deeply understand “soba,” which is a traditional Japanese food culture. Through lectures and workshops, you can happily learn not only cooking techniques but also the history of soba and the spirit (精神性, seishinsei) behind it.

First, while watching the artisan’s example, you will try the series of steps: kneading the buckwheat flour, rolling it out thin, and cutting it into thin strips. We use tools that are easy for beginners to handle, and the instructor will support you carefully, so please join us with peace of mind.
Between practical skills, we have prepared a mini-lecture time to learn about the origin of soba and regional characteristics. Through group work, participants can share discoveries and impressions, deepening their understanding of Japanese food culture.
